So, it is the start of a new year. Whoop dee doo. I have not made resolutions. I think I actually gave up on that a few years ago. Maybe the only resolution I have this year is to resolve to change diapers a little bit quicker as to avoid being peed on or having my beautifully decorated room showered with pee. Sorry, my life these days is lived in three hour increments between feedings and diaper changes.
If you aren’t living life like me (cherish it), then you are probably on a health kick. Maybe you’re going to do a juice cleanse. I give you credit.
Dealing with a one month old all day is making me long for sweets. Which is so weird because during my whole pregnancy, I never craved sweets or chocolate. If anything, that was more Mike than me. But now, while Andy is sleeping, I find myself sneaking off to the kitchen to wolf down a cookie really quickly just to get that chocolate fix. It calms my tired soul.
While we were in the hospital with Andy, some of our amazing friends and family brought us Oreo cookies because they know how much Mike loves them. So, right now, our kitchen is stocked with three full packages of Double Stuf Oreos. That doesn’t include the half eaten packages of Holiday Double Stuf Oreos and Trader Joe’s Peppermint Joe Joe’s. Needless to say I have been eating a lot of Oreos, these cookies, and this bark, minus the candy canes of course. I mean, my decorations may still be up, but I am so off of Christmas related foods.
If you are enjoying a snow day like my husband is, bake up some of these, take a deep breath, then bite into a dozen or so cookies, and screw those new year’s resolutions just for a day or two!
Chocolate Peanut Butter Nutella Oreo Cookies
Ingredients
- 1 cup peanut butter
- 1/4 heaping cup Nutella
- 1 large egg
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons brewed coffee espresso, or water
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 12 Oreo cookies lightly crushed
Instructions

Combine peanut butter, Nutella, egg, and sugars in the bowl of an electric stand mixer fitted with the paddle attachment. Beat on medium speed until combined, scraping down the sides as needed.

Add in the cocoa powder, coffee, vanilla, and baking soda. Beat for another minute or two until well combined. Add the crushed Oreos and use a rubber spatula to gently combine. Place the mixing bowl in the refrigerator for an hour.

Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Use a medium scoop, about 1 ½ tablespoons, and scoop out dough about two inches apart. Use two fingers to slightly press down the tops of the dough.

Bake cookies for 8 minutes. Let cookies cool completely on baking sheet.

These look like the perfect cooking to me–I love the combo of nutella, oreos and PB! So delicious. I am craving these because with this pregnancy all I do is crave sweets!
