Easy avocado cucumber salsa is cool and crunchy. Persian cucumbers coated in avocado, lime, and spicy zhoug sauce. An easy appetizer or snack to throw together on a whim.
Holy H-E-Double hockey sticks, people. What a Monday. Not only is the time change still messing with my head, but things were going wrong left and right. Anybody else have one of those days yesterday?
Now, granted, some of the problems were my own creation. For example, being hella out of shape and walking approximately 16 miles at the International Housewares Show Saturday and Sunday is my fault. If I was in better shape, or even some shape other than blob, I would not feel as if my legs were going to crack off from the hip down.

The second thing that I did to myself and am now paying for is, me and my blog friends who I never get to see or sometimes even meet in real life, decided we should go out for “a drink” after dinner. Flash forward to reliving college days at some hipster college bar in the city and then staying up talking until 3am.
FYI We are all moms of at least 2 children.
I will say that we are all bad ass blog boss babes because we worked our butts off that next day and talked to so many brands and hopefully will bring some good content and giveaways to you guys.
On Sunday, I fell asleep in the basement while Andy watched my favorite show, the Power Rangers, at new time 7pm/old time 6pm. I did get back home to my family around 2:45pm so I gave them a good 3 hours of solid mom work.
I was asleep in bed by 9pm.
It was not enough sleep, but is it ever? Yesterday, I was dragging!
I powered through though because that’s what moms do. I made breakfast and lunch for the kids. I got Andy ready for school early. I went to load up the car while the kids were occupied and…
LOCKED.
I peek in the window and see my keys sitting on the middle console. Crap!
I ran to check the key hook by the door to the garage for the spare. Missing! Double crap!
T-Minus 4 minutes until we have to leave or we will be late for school. I call Mike and naturally he has the key with him. A lot of good that is going to do me. I call my brother who has car seats and whose boys go to the same school as Andy.
T-Minus 4 minutes until school starts!
I cannot get a hold of anybody. Well, looks like Andy isn’t going to school. Woo hoo! Mom of the year. Now having Andy home stops me from doing all the blog work I wanted to while he was at school. Oh, but fear not, because the internet was being crazy and the computer kept asking me for passwords that didn’t exist. Just a sign that I should have stayed in bed.
At least there is food. There is always food. And coffee. Lots of coffee.
This isn’t a classic guacamole recipe. This is a cool and crunchy appetizer that can be thrown together in a pinch. Crisp cucumbers, smashed avocado, lime juice, and spicy zhoug sauce. It goes well with tortilla chips or pita bread.
There was a heated debate on Instagram over what recipe would be featured today. Salsa won by a teeny tiny bit. But don’t worry; I will post that recipe on Thursday.

Easy Avocado Cucumber Salsa
Ingredients
- 2 Ripe Avocados pitted, skin removed, and diced
- 2 Persian Cucumbers seeds scraped out with a spoon and diced
- Juice from 1/2 a Lime
- 1 Teaspoon Zhoug Sauce
- Salt to taste
- Freshly Cracked Black Pepper to taste
Instructions

Add the avocado to a medium mixing bowl. Mix with lime juice and salt and pepper until some of the avocado cubes get a bit mashed.

Add in the zhoug and cucumber. Mix to combine and evenly coat.

Serve with chips or on top of your favorite fish tacos!
