WARNING WARNING SERIOUS VENT SESH AHEAD! Has this been a week or what?!?! I know, I say that a lot here. Juggling the terrible 2’s and 4-year-old diva dude all while trying to do the working from home blogging thing was seriously hard this week.
I broke my own rule of no drinking on weekdays a few times this past week.
I remember when the movie Multiplicity came out, I thought the premise of the film was stupid. Now I’m all like, yep. I get it! I 100% get it! I need, on a daily basis, at least 6 versions of myself.
“Why six?” You may ask.
Well, one to deal with Andy’s needs. That mom needs to play Power Rangers all day long, have endless stamina to run all the races, and cook multiple meals just in case Prince Andy refuses one.
Another one to deal with Jack. To work more closely with Jack’s speech needs, to color and paint all day long, to keep cooking an endless amount of chicken nuggets, and to run up and down stairs all day long changing diapers.
One other version to be the best wife ever to Mike. She would cook, clean, listen intently to all the stories, and basically just put 1950’s June Cleaver to shame.
Weezer needs his own version of me these days too. Poor guy is 10 and practically hobbling around on three legs because of arthritis in his elbow. This version would carry him to and fro, make sure he gets all his pills, and cut some rotisserie chicken into small bits for his poor old man teeth.
Alright, what are we up to, four?
Naturally, I need the good friend, daughter, sister version. She remembers to call, text, email and check in on everybody. She also has this amazing social life and is able to be anywhere at any time.
The last version would be the food blogger all star. She would be posting and interacting on social media all day long, schedule multiple blog posts in advance, have the next two months of recipes planned out, she would take online courses to make her business better, and she would remember to actually write blog posts when she originally intended to write them.
Phew!

I am basically one person doing six different jobs poorly. I know, I know, I am doing fine. I am lucky to have the life I have, I shouldn’t take anything for granted. Keep perspective, blah, blah, blah. Sometimes trying to juggle it all leaves you feeling a bit underwater.
It helps to vent to you all though. I know you always listen and rarely complain in the comments.

Broccolini and Chorizo Flatbread Pizza
Ingredients
- 1/2 Pound Ground Spicy Pork Chorizo
- 3/4 Cup Marinara or pizza Sauce
- 1, 8 Ounce Ball of fresh Mozzarella sliced
- 3 Ounces about 4 Pieces of Broccolini, stems trimmed
- 3 Lemon Slices
- 3 Pieces of Na'an or Flatbread
- Crushed Red Pepper Flakes
Instructions

Preheat the oven to 500 degrees F.

Heat a small pan over medium/high heat. Add the ground chorizo and use a wooden spoon to break the chorizo into small pieces. Cook the chorizo for about 7 minutes until mostly broken apart and cooked through. Remove from heat.

Add flatbreads to a large baking sheet. Top each flatbread with 1/4 cup of tomato sauce, a few slices of cheese, a few pieces of broccolini, and about 1/3 cup of chorizo crumbles. Top each slices with a squeeze of the lemon slice and the actual lemon slice.

Bake the pizzas for 10-15 minutes until the cheese is melted.

Let the pizzas cool for about 5 minutes before slicing, topping with crushed red pepper flakes, and serving.
