A little bit of fresh Thai basil, ground chicken, and other Asian sauces and seasonings make this perfect as a weeknight meal. You will be looking forward to having leftovers of Instant Pot Thai basil chicken over rice the next day.

Actually, I am hoping it wasn’t too crazy of a weekend and we all found time to rest and relax. There is nothing worse than traveling when you are tired or, God forbid, hungover.
Wait. There is actually something worse!
You thought hangovers in your 20’s were bad, not only to hangovers intensify with age, you also have to answer to teeny toddler tyrants who don’t really nap anymore when you get home. Pray for me that I was smart and didn’t go crazy.
I am excited to come home and see Mike, the boys, and Weezer. Another reason I am happy to come home is because I meal prepped like a boss before I left.
Lists were made. Shopping trips done did!
I left feeling like there was nothing hanging over my head. And before you go rolling your eyes, just know, this rarely happens.
Meal planning I can do, sticking to the meal plan or even the grocery list is a whole other beast. I think I did it though.
I made a big batch of Instant Pot Thai basil chicken and rice. I figure we can eat this for dinner tonight and throughout the week. The rice can also go to burrito bowls or fried rice.
Now, all I have to worry about is what are the kids eating for dinner? ha! Always something.

Instant Pot Thai Basil Chicken
Slightly sweet and spicy thai basil chicken cooked in the pressure cooker served over rice.
Ingredients
- 1 lb ground chicken
- 1 tbsp low-sodium soy sauce
- 1 tbsp fish sauce
- 2 tsp honey
- 1 tsp chili sauce or sriracha
- 4 garlic cloves, minced
- 1 yellow onion, diced
- 1 cup fresh Thai basil leaves
- salt and pepper, to taste
Instructions
- Add the chicken, soy sauce, fish sauce, cili sauce, honey, garlic and onion to the Instant Pot. Use a wooden spoon to mix and combine everything, breaking up the chicken.
- Press the "pressure cook" button, making sure high pressure is selected. adjust the time until the display reads 10 minutes. Secure the lid with the steam vent in the closed position.
- Quick release pressure.
- Set the pot to "sauté". With the lid open, cook down the liquids remaining for about 4 minutes.
- Press "cancel." Mix int he Thai basil and then serve over brown rice or in lettuce leaves as wraps.
