Peach lime margaritas are the perfect balance of sweet and sour. Easy for summer sipping and super easy to make in big batches. Watch out though, because peach lime margaritas go down really easily.
Don’t even look at me that way—thinking I am going to start pumpkin recipes when summer sin’t over until September 22nd. Ha! If you want pumpkin, search the archives. A few of my faves are pumpkin chorizo bolognese, pumpkin seed granola, and pumpkin cake cookies.
That’s just to name a few.
See, I don’t hate fall. I am just not ready to say goodbye to summer produce yet. If you follow along on Instagram, then you know, I have basically turned into an heirloom tomato.
I figured, with Labor Day being this weekend, you all might be as likeminded as I am and want a killer last summer bash cocktail. After this, Andy starts school and all my weekends continue to be filled with Mike’s football schedule for the next 7 weeks.
I have to actually thank my kids for inspiring this cocktail. Not only have they been driving me to break my weekday no drinking rule, but they made me buy this peach juice from Trader Joe’s.
As little two-and-a-half-year-old Jack lifted the gallon of peach juice into the cart, I thought, well, I have a lot of peach juice to drink. I thought there was no way that the boys would like this juice once we got home. Challenge two stubborn toddlers, and that challenge shall be accepted and completed.
That’s what I get, I guess.
I had to hoard two cups off to the side for recipe testing purposes. Now, I know, lime and peach might not sound like it goes together. I was skeptical too, but the ratios are perfect. It is a little bit acidic and limey and then sweet peachy to smooth the drink out.
I also used a little blue agave in the recipe just to meld things all together a little better. Peach lime margaritas go great over a ton of crushed ice and garnished with a beautiful fresh peach wedge.
A drink and a snack?!?!? Watch out bloody Mary, peach lime margaritas are coming for ya!
