Caramelized Fennel and Onion Dip

Caramelized fennel and onion dip is made by easily caramelizing fennel and onions in the oven. The caramelized onions and fennel are mixed with sour cream, salt, pepper, and fresh chives. It’s an easy and fresh take on a classic party appetizer.

NOOOOOVEMBER! It’s time to bombard you with recipes for Thanksgiving. Now that Halloween is out of the way we can kiss some of our favorite pumpkin recipes goodbye. Maybe not goodbye, but maybe step aside to make room for all the comfort food and appetizers.

I have talked about this before on the blog. We go up to Mike’s family for Thanksgiving so I never have to worry about the dinner items. I usually bring an appetizer or a dessert. It’s an easy way to offer to help without stepping on the host/hostess’ meal planning toes, so to speak.

Oven Caramelized Onion

I have always wanted to test out Fit Foodie Finds oven caramelized onion method. It seemed so hands off and easy. I thought to take it to the next level by tossing in a little fennel which adds a nice hint of sweetness. These onions and fennel are a dream. I would totally slather them inside a grilled cheese or toss them on top of a burger.

The best way to use these onions and fennel is in a French onion type dip. This dip is going to be my new Thanksgiving appetizer. Mike’s family loves store-bought French onion dip, so to make a homemade one where I can control all the ingredients is a great addition to the spread.

Caramelized fennel and onion dip is made with the oven roasted, caramelized onion, fennel, and garlic mixed together with sour cream, salt, pepper, and fresh chives. It is better than any store bought version I have ever tasted. Plus, you don’t have to stand over a pan for 40-50 minutes watching onions caramelize.

Serve the dip with a sturdy chip to get all those onion and fennel bits. I really love the onion flavor with a sweet potato chip. Don’t knock it until you try it!

Caramelized Fennel and Onion Dip

Yield: Serves 4-6
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Oven caramelized onion, fennel, and garlic mixed with sour cream, chives, salt, and pepper for an easy French Onion type dip.

Ingredients

  • 1 small red onion
  • 1 small yellow onion
  • 1 small fennel bulb
  • 4 tbsp extra-virgin olive oil
  • 2 garlic cloves, peeled and smashed
  • 1 1/2 cup sour cream
  • 1/2 tsp salt, or more to taste
  • 1/4 tsp black pepper, or more to taste
  • 1 tbsp fresh chopped chives

Instructions

  1. Preheat the oven to 400 degrees F. use a mandolin or an inspiralizer set to the C setting to finely slice the onions and fennel.
  2. Toss the onions, fennel, garlic, and olive oil together on a medium baking sheet. Arrange in one flat layer as best you can.
  3. Bake the onions and fennel in the over for 15 minutes, remove, toss using tongs, and return to the oven for another 15 minutes until deeply caramelized.
  4. Use kitchen shears to cut the onions and fennel into small bite-sized pieces. Mince the caramelized garlic cloves.
  5. Once the onions and fennel are completely cooled, mix them into the sour cream along with the garlic, salt, pepper, and chives.
  6. Chill the dip in the fridge for at least an hour before serving.
