Sorry for the absence around here lately. To be honest, the impending school year and all the uncertainty sort of got the best of me the past few weeks.

Imagine all the anxious hair twirls.

That’s why I had to take a break.

Now that my husband and the boys’ school years are figured out, I can maybe slightly relax and get back to blogging as usual.

During my brief hiatus, I sought comfort in all the snack food.

Most days were spent reading on the deck with the boys splashing in the inflatable pool. When they got hangry, I brought out big snack trays.

Classic homemade ranch dip is always a go to, but it goes too quickly.

We are also big fans of salsa and guacamole, but guac usually gets forgotten about and turns brown.

My most favorite anxiety curing (don’t hold me clinically responsible for that statement) dip during these times was this easy avocado ranch dip.

I liked it with chips; tortilla or potato. It works with both.

Easy avocado ranch dip is dilly, onion-y, and packed full of good, creamy avocado flavor. You just throw all the fresh ingredients into a food processor and puree until smooth.

This dip is also great on burrito bowls or tacos.

I have never seen an avocado that large. I used half of the giant avocado for this recipe. Half of that giant came out to about a whole small avocado.

Add more or less avocado and you can totally sub in Greek yogurt instead of sour cream and mayo.

Easy Avocado Ranch Dip

Creamy avocado ranch dip is made from avocado, sour cream, buttermilk, mayo, garlic, and fresh herbs.

Ingredients

• 1 Haas avocado or half a Florida avocado
• 1/4 cup sour cream*
• 2 tbsp mayonnaise
• 1/2 cup buttermilk**
• 1 tsp salt
• 1/4 tsp black pepper
• 1/4 onion powder
• 1/4 tsp garlic powder
• 2 tbsp roughly chopped fresh parsley
• 1 tbsp roughly chopped fresh dill
• 10 chives, roughly chopped

Instructions

1. Combine all the ingredients in a food processor. Puree until smooth and creamy, scraping down the sides as needed.
2. Taste the dip and adjust the salt and pepper if needed before giving it one last puree.
3. Serve with fresh chopped veggies, tortilla chips, or potato chips.

Notes

*You can also sub in plain Greek yogurt instead of sour cream and mayo.

**To turn this dip into a salad dressing add a few tbsp more of buttermilk to thin it out.
