Garlic butter baked chicken is made using three ingredients, not counting salt and pepper. It is super juicy and makes a great addition to a salad or sandwich throughout the week.
Happy new year! But also, shhh, don’t be too loud about it. 2020 is still lurking around the corner.
So says the meme floating around the internet.
I am not one for resolutions so to say.
My game plan is to just kind of keep doing what I have been doing, except a little better.
We let ourselves slide a bit with at home cooking over the winter break.
I am sure if you check back to my first post of the new year last year, it would say something similar.
Here’s to cooking more easy at home meals and powering through my childrens’ requests for “outside food.”
That is what they call fast food or take out.
They make it sound like I’m the warden of a jail or something.
First recipe of 2021 is this no-brainer, easy, baked chicken.
All you need is a little fresh grated garlic, unsalted butter, chicken, salt, and pepper to make this garlic butter baked chicken.
Chicken breasts these days are monstrous!
I recommend using cutlets or cutting each bad boy down the middle width-wise, as if you would if you were butterflying the chicken breast.
Toss the chicken in a bowl with melted butter, fresh garlic, and a little s & p.
Transfer it to a baking sheet and bake at a high heat.
The oven does the rest!
The end product is super juicy chicken that has a little golden crunch to it.
I love garlic butter baked chicken in salads, on a sandwich, or just served as is with a sautéed or roasted veggie on the side.
You could not ask for an easier recipe to get you to do more cooking at home!
Sorry for the lack of more “how-to” photos.
Nobody wants to look at raw chicken.
Amiright?!?!
