Raise your hand if you’re over winter.

I was pretty much over it after all the Christmas decor came down.

Meals around here have been sticking to the usual plan.

On Monday, we have pasta/ Italian night.

Tuesday is tacos/Mexican.

Wednesday is soup and sandwich night.

I rotate through various versions of these ham and Swiss sandwiches, grilled cheese, or BLT’s.

Those are by far my favorite sandwiches to go with soup.

My Mom always makes ham and Swiss sandwiches after Easter withe the leftover ham.

I find myself craving them throughout the year.

That’s why I make them so often. Comfort.

I gave that plain, old, just fine as she is sandwich a makeover and turned it into a fancy sandwich.

Baked ham and Swiss croissants have spicy mustard, and a bit of fresh baby spinach for health.

Then the thing that makes them truly rock, is the butter and everything bagel seasoning on top.

Cover the pan in foil and bake until the cheese is melted.

These sandwiches are great wrapped individually and heated up for a quick make ahead lunch.

You can also make then for a crowd with a side of tots for let’s say Super Bowl viewing.
