Cottage Cheese Tomato Toast

Cottage cheese tomato toast is having a moment in my breakfast and lunch repertoire. Toasted sourdough, cottage cheese, arugula, and an heirloom tomato. Give or take some salt, pepper, everything bagel seasoning, and maybe even a dash of hot honey. This is the perfect quick meal or snack.

I have to admit I am late to the party on the cottage cheese love. I thought the moment in the sun would fall to the wayside like the likes of the one pot Boursin pasta dish or cauliflower posing as every other food on the earth.

Nope!

It is still going strong. Something about the look of cottage cheese has always given me the yucks. Where as my husband grew up eating cottage cheese mixed into pasta sauces and stews.

Now there is everything from whipped cottage cheese dips to cottage cheese bread.

I get it though. You want something with more protein that fills you up longer.

I finally gave in when I saw How Sweet Eats’ recipe for smoked salmon toast with cottage cheese

I ate it for breakfast every single day for a week. But, smoked salmon can be expensive to always keep on hand.

My toast devolved into an upscale form of tomato toast.

Normally, my favorite tomato toast is made with sunflower seeds, Duke’s mayo, sprouts, and heirloom tomato. Find that recipe here. It is a summer staple.

Cottage cheese tomato toast is made with the following:

  • cottage cheese
  • arugula
  • thick slices of heirloom tomato
  • salt and pepper
  • everything bagel seasoning

I have also added some fresh lemon juice or hot honey to the top of the tomatoes for a little twist.

Don’t ask me about which variety of cottage cheese to use for cottage cheese tomato toast. I am still a novice and don’t know enough about the curd size or which brand is the best.

Daisy or Trader Joe’s brand cottage cheese are normally my go-to’s. I think I’m a small curd kind of lady. Not sure though.

Cottage Cheese Tomato Toast

Cottage Cheese Tomato Toast

Cook Time: 3 minutes
Total Time: 3 minutes

Toasted sourdough topped with cottage cheese, everything bagel seasoning, arugula, and tomato.

Ingredients

  • 1 thick slice of sourdough bread
  • 3 heaping TBSP of cottage cheese
  • 1/2 tsp everything but the bagel seasoning
  • big pinch of baby arugula
  • 2-3 thick slices of heirloom tomato
  • salt and pepper

Instructions

  1. Toast the bread to your desired level; golden to burnt.
  2. While the bread toasts, slice your tomato and assemble your ingredients.
  3. Top the toasted bread with cottage cheese and then the everything bagel seasoning. Use more or less as you see fit.
  4. Top the seasoned cottage cheese with arugula and tomato slices.
  5. Season with a pinch of salt and pepper. Slice and then eat!

Notes

Use as much or as little salt, pepper, and everything bagel seasoning as you see fit. Measure with your heart. Beast eaten right away.
