Instant Pot bacon, caramelized onion, mushroom orzo comes together for dinner in a matter of twenty minutes! This may seem like a hearty fall dish but with the use of your pressure cooker, you can have Instant Pot bacon, caramelized onion, mushroom orzo any time of year.

You may not think cooking pasta in the multi-cooker really works. You may also think it isn’t that big of a hassle to boil water, drop in pasta, and wait.
If that’s the case then you also may not be a person that has, um, maaaaybe forgotten about boiling water and almost set their house on fire more than once. And if that’s you, well, good on ya. You have your ish together more than the rest of us.
I like to make pasta dishes in my multi-cooker because it’s all one pot. A little bit of chopping, sautéing, and then hit the pressure. Done! I also believe a certain famous chef loves his multi-cooker for risotto. I have yet to try that method but I don’t doubt the creamy results.
You may also be thinking, Why are you making instant pot bacon, caramelized onion, mushroom orzo in the summer?
To that I say, “Why not?!?!?”
All the ingredients are available in my store year round and I can only eat so many fresh summer tomato dishes.

Instant Pot Bacon, Caramelized Onion, & Mushroom Orzo
Crispy bacon, caramelized onions, sautéed mushrooms, & orzo pasta cooked in the Instant Pot all in a little creamy garlic bacon sauce.
Ingredients
- 3 bacon slices, diced
- 4 oz baby bella mushrooms, diced
- 1/2 vidalia onion, diced
- 2 garlic cloves, minced
- 1 tbsp cooking sherry
- 2 tsp Worcestershire sauce
- 1 fresh thyme sprig
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 1/8 tsp crushed red pepper flakes
- 1 cup orzo
- 1 1/4 cup chicken stock
- 1/2 cup crumbled feta cheese
Instructions
- Press the sauté button on your multi-cooker. Add the bacon. Cook for about 7 minutes until crispy. Remove bacon using a slotted spoon and transfer to a paper towel lined plate.
- Add mushrooms and onions. Cook for 4-5 minutes until slightly caramelized.
- Add garlic, stir, and cook for 1 minutes.
- Press cancel.
- Deglaze the pan with the worcestershire and sherry. Mix and stir to release any brown bits from the bottom of the pot.
- Mix in the seasonings, thyme, orzo and the stock.
- Secure the lid with the steam vent sealed. Press pressure cook or manual and high pressure. Adjust the time until the display reads 4 minutes.
- After the timer sounds and the orzo is cooked, quick release the pressure. Remove lid. Remove the thyme sprig. Mix bacon back into the orzo with a fork. Add more salt or pepper to taste.
- Garnish with feta cheese and serve.
Notes
If you want to make this without bacon, substitute in 2 tbsp olive oil and just skip the cooking bacon step.
