This week I wanted to arm you guys with as many recipes and recipe ideas so that whether you are the head chef in charge of dinner or a guest heading to friend’s or family’s house, you can find something.
Last week we made Instant Pot brown butter mashed potatoes. Today we are making roasted green beans with bacon and pecans. I mean, who doesn’t love bacon? (Aside from vegans and vegetarians, obviously.)
If you are looking for a meat-free green bean option, I highly highly recommend my slow cooker Greek green beans. Set it and forget it. One less thing to worry about, right?
I love roasting green beans as a switch up from the usual green bean casserole. The beans have a slight snap to them still. The crispy bacon and pecans add so much extra flavor and crunch.

I love baked brie for Thanksgiving. It can stand alone and feed a small crowd or be the centerpiece in a massive cheese board platter. I have another epic baked brie coming up on Friday.

Roasted Green Beans with Bacon and Pecans
Roasted green beans with crispy bacon and toasty pecans.
Ingredients
- 4 slices of bacon, diced
- 1 lb green beans, trimmed
- 1 tbsp olive oil
- salt, to taste
- black pepper, to taste
- 1/3 cup sliced pecans
- 1 tsp lemon juice
Instructions
- Preheat the oven to 375 degrees F. Line a large baking sheet with foil. Arrange the diced bacon on the prepared baking sheet. Bake the bacon for 5 minutes.
- After 5 minutes, remove baking sheet. Toss the bacon with the green beans. Season with salt and pepper. Return the pan to the oven and bake for 7-8 minutes, until the bacon is crispy.
- Add the pecans to the baking sheet, toss to combine. Return the baking sheet to the oven and roast for 3-4 minutes.
- Top the beans with the lemon juice and then serve hot.
