An odd combo, I know. Spicy chorizo sausage, bitter broccolini, and tart lemon on a crispy flatbread pizza. It is a perfect combination of comfort pizza and experimental pizza.

Ingredients
1/2PoundGround Spicy Pork Chorizo
3/4CupMarinara or pizza Sauce
1, 8OunceBall of fresh Mozzarellasliced
3Ouncesabout 4 Pieces of Broccolini, stems trimmed
3Lemon Slices
3Piecesof Na'an or Flatbread
Crushed Red Pepper Flakes
Instructions
Preheat the oven to 500 degrees F.
Heat a small pan over medium/high heat. Add the ground chorizo and use a wooden spoon to break the chorizo into small pieces. Cook the chorizo for about 7 minutes until mostly broken apart and cooked through. Remove from heat.
Add flatbreads to a large baking sheet. Top each flatbread with 1/4 cup of tomato sauce, a few slices of cheese, a few pieces of broccolini, and about 1/3 cup of chorizo crumbles. Top each slices with a squeeze of the lemon slice and the actual lemon slice.
Bake the pizzas for 10-15 minutes until the cheese is melted.
Let the pizzas cool for about 5 minutes before slicing, topping with crushed red pepper flakes, and serving.
