Broccolini and Chorizo Flatbread Pizza

An odd combo, I know. Spicy chorizo sausage, bitter broccolini, and tart lemon on a crispy flatbread pizza. It is a perfect combination of comfort pizza and experimental pizza.

Servings 3 Pizzas

Ingredients

  • 1/2 Pound Ground Spicy Pork Chorizo
  • 3/4 Cup Marinara or pizza Sauce
  • 1, 8 Ounce Ball of fresh Mozzarella sliced
  • 3 Ounces about 4 Pieces of Broccolini, stems trimmed
  • 3 Lemon Slices
  • 3 Pieces of Na'an or Flatbread
  • Crushed Red Pepper Flakes

Instructions

  1. Preheat the oven to 500 degrees F.
  2. Heat a small pan over medium/high heat. Add the ground chorizo and use a wooden spoon to break the chorizo into small pieces. Cook the chorizo for about 7 minutes until mostly broken apart and cooked through. Remove from heat.
  3. Add flatbreads to a large baking sheet. Top each flatbread with 1/4 cup of tomato sauce, a few slices of cheese, a few pieces of broccolini, and about 1/3 cup of chorizo crumbles. Top each slices with a squeeze of the lemon slice and the actual lemon slice.
  4. Bake the pizzas for 10-15 minutes until the cheese is melted.
  5. Let the pizzas cool for about 5 minutes before slicing, topping with crushed red pepper flakes, and serving.
