Cilantro Lime Vinaigrette

A super easy vinaigrette made from cilantro, red wine vinegar, lime juice, onion, and garlic. Perfect for salads and marinades.

Servings 1 Cup

Ingredients

  • 2 Tablespoons Chopped Vidalia Onion or Shallot
  • 1 Clove Garlic chopped
  • 2 Cups Fresh Cilantro Leaves some of the thinner stems are ok
  • 1 1/2 Tablespoons red Wine Vinegar
  • Juice from 1 Lime
  • 1/2 Cup Extra Virgin Olive Oil
  • Sa;t and Fresh Cracked Black Pepper

Instructions

  1. Combine all ingredients in a food processor. Puree until smooth, scraping down the sides as needed.
  2. Taste and add more salt or pepper if needed.
  3. Store in an airtight container in the refrigerator for up to 7 days.
