Creamy and slightly spicy queso dip topped with charred corn and real crab meat.
Turn your broiler on high and place the corn under that for a few minutes or char an ear of corn over the stovetop flame. Use a knife to slice down the side of the ear of corn to remove the corn from the cob. Set off to the side.
In a small stock pot, melt the butter over medium/low flame. Add the crab meat, garlic and the cumin. Once the butter melts, add the flour. Whisk to combine.
Slowly pour in the milk. Reduce the heat to low. Add the cheeses. Keep whisking until the cheese melts.
Stir in most of the corn except a few pieces for garnish. Season to taste with the salt and black pepper.
Serve with chips and some fresh cilantro leaves for garnish.
