Ingredients
2Kirby Cucumberssmall pickling cucumbers
4Nectarines
1/2CupCrumbled Sartori Dolcina Gorgonzola Cheese
1TablespoonFinely Chopped Fresh Basil
Zest of 1/2 Lemon
Salt and Freshly Cracked Black Pepper
Balsamic Glaze Drizzle
Instructions
Use a vegetable peeler to peel each cucumber into ribbons. Peel the cucumber length wise until you start to see too many seeds. Flip the cucumber and peel the other side.
Slice the nectarines in half, twist and open. Remove pits and slice into wedges.
Roll the cucumber ribbons into rolls/roses. Arrange on a plate with nectarine wedges.
Sprinkle gorgonzola on top of the salad along with the fresh basil, lemon zest, salt, and freshly cracked black pepper.
Finish by drizzling with balsamic syrup/glaze. Best if eaten the day of.
