Preheat the oven to 400 degrees F.

Add French fries to baking sheet and bake for 10-15 minutes, until slightly golden and crisp. Remove from oven and set off to the side.

Mix together eggs, milk, salt, and pepper.

Heat olive oil in a medium non-stick skillet over medium heat for a minute, until hot. Add French fries and give a quick toss. Pour in egg mixture and, using a rubber spatula, stir to evenly coat all the French fries. Cook while flipping/stirring occasionally for about 5-7 minutes until cooked through.

Top with any of the above toppings or anything else you would like. If you are adding in meats, cook them before you add the French fries. If you are adding in cheese, add it after the eggs are semi-cooked.
