Greek Gyro Nachos

All the gyro flavors you love on a tortilla chip. Easily shareable and easily transportable.

Ingredients

For the Meat:

  • 1 Teaspoon Olive Oil
  • 1 lb Lamb Loin Chops cut off the bone
  • 1 Tablespoon Lemon Zest
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Fresh Dill
  • 1 Garlic Clove minced
  • Salt and Pepper

For the Nachos:

  • 8 Ounces Tortilla Chips
  • 1 Cup Tzatziki Sauce
  • 1/4 Cup Minced Red Onion
  • 3/4 Cup Diced Roasted red Peppers
  • 1/2 Cup Pitted and Halved Kalamata Olives
  • 2 Persian Cucumbers thinly sliced
  • 3/4 Cup Feta Cheese Crumbles
  • Fresh Dill
  • Salt and Freshly Ground Pepper to taste
  • Tiny Drizzle of Extra virgin Olive Oil

Instructions

  1. Using a very sharp knife, cut the lamb off the bone the best you can. Add the lamb pieces along with the lemon zest, oregano, dill, garlic, salt, and pepper to a small food processor. Pulse until the meat is ground.
  2. Add olive oil to a medium skillet over a medium/high flame. Add the ground lamb mixture to the pan. Cook until browned, about 10 minutes. Transfer cooked meat to a small dish, trying to keep out all the rendered fat. Set off to the side.
  3. Next, lay your chips out in one even layer on a 9x13-inch baking sheet. Scatter tablespoon dollops over the chips. Be sure to lift a few chips here and there to try and cover as much surface area as possible.
  4. Top the chips with lamb, onion, olives, cucumbers, and red peppers. Add the crumbled feta and fresh dill to the top of the layers of nachos.
  5. Cover with foil and place the cookie sheet under a low broiler in your oven for 3-5 minutes until just warmed.
  6. Remove foil and serve right on the cookie sheet.
