Ingredients
2, 15OunceCans Black Beansdrained and rinsed
1, 4OunceCan Green Chiles
1, 15OunceCan Diced Tomatoes
½CupVegetable Stock
1TablespoonTaco/Chili Seasoning
Instructions
Add one can’s worth of black beans, a little over a cups worth, along with the stock to a food processor. Puree until smooth, about two minutes.
Add the black bean puree, remaining black beans, green chiles, diced tomatoes, and taco seasoning to a large stock pot. Bring to a simmer and cook for about 10 minutes until hot.
Serve with sour cream, cilantro, hot sauce, or sliced jalapenos.
