Meatless Monday: Creamy Vegetable Enchilada One Pot Pasta

Ingredients
2CupsEnchilada Sauce
2CupsVegetable Stock/Water
10OuncesFrozen and Thawed Sliced Bell Peppers
4OuncesCream Cheese
8OuncesSpaghetti
Salt and Pepperto taste
Fresh Chopped Cilantrooptional
Instructions
Combine all ingredients in a large skillet. Bring to a simmer over a medium/low flame. Break the cream cheese into smaller cubes/chunks. Cover the skillet with a lid and simmer for 26 minutes, stirring occasionally to make sure the noodles don’t stick together.
Mix the noodles and sauce together until the cream cheese is completely incorporated. Season to taste with salt and pepper and add fresh cilantro if using. Remove from heat and serve.
