Mini Peanut Butter, Blueberry, and Strawberry Muffins

Peanut butter and fruit loaded mini muffins for little kiddos on the move!

Ingredients

  • 1 egg
  • 3 Tbsp butter melted
  • ¾ cup plain nonfat greek yogurt
  • 1/3 cup sugar
  • 1/3 cup peanut butter or your favorite nut butter
  • 1 tsp cinnamon
  • 1 cup flour minus 2 Tbsp
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1/2 cup frozen blueberries
  • 1/3 cup diced fresh strawberries

Instructions

  1. Combine first 5 ingredients in a large bowl and mix well.
  2. Add cinnamon, flour, baking powder and baking soda to bowl and mix until just combined.
  3. Stir in the blueberries and strawberries.
  4. Spoon into well-greased mini muffin tins. Fill about 3/4 of the well with batter.
  5. Bake at 375 degrees F for 18 minutes.
  6. Transfer muffins to wire rack to cool completely.
