Peach, Strawberry, & Arugula Salad with Brown Sugar Balsamic Vinaigrette

Say good bye to summer with this mix of fresh arugula, strawberries, and peaches topped off with feta cheese and brown sugar balsamic vinaigrette.

Ingredients

For the Vinaigrette:

  • 1/4 Cup Balsamic Vinegar
  • 3/4 Cup Extra Virgin Olive Oil
  • 2 Tablespoons Dark Brown Sugar
  • 1 Large Clove of Garlic freshly Grated
  • Salt and Pepper to taste

For the Salad:

  • 5 Ounces Arugula
  • 2 Large Ripe Peaches, pitted and sliced
  • 1 Pint of Strawberries stemmed and sliced
  • 1/2 Cup Feta Crumbles
  • 1 Cup Favorite Croutons

Instructions

  1. Add balsamic, olive oil, brown sugar, garlic, salt, and pepper to a small bowl or mason jar with lid. Whisk or shake to combine. Let the vinaigrette sit at room temperature before serving. Shake vigorously before adding to salad.
  2. Add salad ingredients to 2-4 bowls or one large salad bowl.
  3. Pour a little bit of the vinaigrette over the salad, toss, and then see if you need more. This vinaigrette recipe makes a lot of excess for other future salads.
  4. Top with more salt and freshly ground black pepper then serve.
