Peach, Strawberry, & Arugula Salad with Brown Sugar Balsamic Vinaigrette

Ingredients
For the Vinaigrette:
1/4CupBalsamic Vinegar
3/4CupExtra Virgin Olive Oil
2TablespoonsDark Brown Sugar
1Large Clove of Garlicfreshly Grated
Salt and Pepper to taste
For the Salad:
5OuncesArugula
2LargeRipe Peaches, pitted and sliced
1Pintof Strawberriesstemmed and sliced
1/2CupFeta Crumbles
1CupFavorite Croutons
Instructions
Add balsamic, olive oil, brown sugar, garlic, salt, and pepper to a small bowl or mason jar with lid. Whisk or shake to combine. Let the vinaigrette sit at room temperature before serving. Shake vigorously before adding to salad.
Add salad ingredients to 2-4 bowls or one large salad bowl.
Pour a little bit of the vinaigrette over the salad, toss, and then see if you need more. This vinaigrette recipe makes a lot of excess for other future salads.
Top with more salt and freshly ground black pepper then serve.
