Ingredients
10OuncesShredded Carrots
1 ¼CupWater
1CupWhite Vinegar
¼CupSugar
2TablespoonsSalt
½TeaspoonCoriander Seeds
¼TeaspoonBlack Peppercorns
2Garlic Clovessmashed
½ - 1TeaspoonChipotle Paste/Pureedepending on how much heat you can handle
Instructions
Combine water, vinegar, sugar, salt, seeds, peppercorns, garlic, and chipotle in a saucepan. Bring to a simmer. Simmer ten minutes over medium/low heat.
Add carrots to the liquid. Remove from heat. Let sit for five minutes.
Carefully transfer carrots, using tongs, to a large mason jar or two smaller mason jars. Pour liquid over carrots. Chill completely before placing lid on. Allow 24 hours before eating.
